Waffle day came a day early for me. It was super exciting and super delicious. Thanks to Love and Olive Oil I was able to break out our new-ish (we got it for a Christmas present and haven't used it yet) waffle maker and whip up some flavorful and satisfyingly filling, decked out waffles. The base was a cornbread waffle, mixed chives, parsley, and basil. The waffle then had salted honey butter spread over it and was topped with an over easy egg, light kale salad, avocado, and breakfast meat. The flavor profile was insane. Imagine savory waffles with a sweet spread, hearty eggs with light, fresh greens. Actually, don't imagine it, go try it for yourself, after all waffle day is tomorrow! "Your welcome."

I had a lovely night with my mom, enjoying dinner at a new, intriguing place in in the village center, Cafe Mezcla. Waffle sandwiches and crepes, yumm-o! I loved having the company of my mom, being able to sit back, chat, and relax. |
