Date Night Dinners - One Pouch Wonder
Brenden and I have definitely been on a quick and easy kick when choosing what we want to make for dinner. We want delicious and filling, of course, but most important is ease. With school and work, the last thing I want to do when I get home is to try and figure out a creative recipe (okay, I want to, I just don't have the energy for it). My creative juices have been drained for the moment. Don't worry, they will be back in May. But for now its simple and easy. I am sure everyone can use a break now and then.
Now I know I say our dinners are easy and delicious pretty much every week. But this week tops them all. This recipe has only 5 simple steps, and that is because I broke each on down. In reality making this dish goes something like through all your ingredients in a pile and bake. Then, TA-DA a delicious meal. You think I am joking right. Nope.
When I first showed this recipe to Brenden he wasn't too excited. He saw a long list of veggies and decided to look for a different option. It wasn't until he realized how easy and customizable this aluminum foil trick is that he got on board. Put in any veggies you want, any meat you want - or leave it out for a vegetarian spin (okay i guess I used my creative juices a smidgen for this one). Brenden even added apple slices to give his a little zing of apple in each bite. Honestly anything works. You have a night on the go or a bunch of veggies about to turn...throw them in and cook them up.
You don't need much in the way of seasonings either. Since everything is piled and enclosed into one pouch, all of the tastes from the main ingredients release into the dish as it is cooking. Again, it is delicious, quick, easy, and simple fix. And, I almost forgot; there was no clean up because you are cooking in aluminum which is just tossed at the end. How much more perfect can it get?! Really. Try it yourself. And let me know what great ingredient combo you came up with.

Ingredients (for 1 pouch)
- 2 Spicy Italian Turkey Sausages, sliced
- 1 red potato, diced
- 1/4 sweet potato, diced
- 1/4 red pepper, sliced
- 1/4 yellow onion, sliced
- Seasoning of your choice to taste
Directions
- Preheat oven to 400 degrees.
- Place all of the ingredients in the center of a large sheet of aluminum foil.
- Wrap foil around ingredients and seal shut.
- Place sealed foil in oven and bake for 22-27 minutes.
- Remove, unwrap, and enjoy.
