I had a nice first half of the day relaxing with Brenden. Then an exciting, fall-inspired time, cooking pumpkin doughnuts (see recipe below) and carving pumpkins with Brenden, Lauren, and DJ. All of our pumpkins turned out pretty spooky and the dessert was quite delicious (although they turned out to be muffins not doughnuts) after all of our hard work!

Pumpkin "Doughnut [Holes]" (Mini Muffins) with Homemade Chocolate Icing

Ingredients
Doughnuts/Muffins
  • 1/4 cup butter, melted
  • 1/4 cup nonfat Greek yogurt
  • 1.5 cups pure pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 1 cup all-purpose flower
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 tsp salt
  • 1.5 tsp baking powder
Icing
  • 1/4 cup butter
  • 2 Tbsp unsweetened cocoa powder
  • 1/4 cup whole milk
  • 1.5 cup powder sugar
  • 1/2 tsp vanilla extract

Directions
  1. To make the doughnuts/muffin, preheat oven to 350 degrees.
  2. Spray two 6-count muffin or doughnut pans with baking spray.
  3. In a medium bowl, whisk together flour, cinnamon, nutmeg, ginger, salt, and backing powder.
  4. In a large bowl, whisk together butter, yogurt, and pumpkin.
  5. Add the eggs and vanilla, whisking until well combined.
  6. Slowly add in the flour mixture, whisking until just fully combined.
  7. Spoon batter into prepared pans, smoothing as needed.
  8. Bake for 12-15 minuted, until golden brown and cooked through. (Test by sticking a toothpick in the middle. If it comes out almost dry, they are perfect.)
  9. Let the doughnuts/muffins cool.
  10. While the doughnuts/muffins are baking, bring butter, cocoa powder, and milk to a boil in a medium saucepan.
  11. Once it boils, remove from hear and whisk in powdered sugar and vanilla until smooth.
  12. Remove doughnuts/muffins from pan and place on aluminum foil.
  13. Pour icing over doughnuts/muffins.
  14. Let stand for a few more minutes to allow icing to set.
  15. Serve, enjoy, and devour!
