Date Night Dinners - Cups Of Joy

Taco Night! Yum. This week we went with an old favorite...with a spin. We made our own, edible bowls, taco cups, taco crisps, taco salad plates, call it what you want; it was delicious. I know you have seen those infomercials on television where they try to sell you the kit and tools to make shell bowls (I think Brenden was watching one when he came up with this idea...just kidding Brendo). Well trust us, you don't need to invest in any of that stuff. You just need a muffin tray.


We started our tacos off as we normally do, browning the meat and chopping the veggies. All the ingredients create such a fantastic aroma. Then we got to the shells. I was a little skeptical. (I always saw pictures and videos of the shells collapsing, not holding their shape after being taken out of the oven. All of the ingredients end up flying everywhere. Then you don't have a dinner and you will probably trip over all of the spilled ingredients. Maybe I am the one who has been watching too many of those informercials .) But, Brenden assured me it would work. And he was spot on! 

Look, he was concentrating so hard :). And it was well worth the effort. Bravo!


We placed our shells on the upside down muffin tray and popped them in the oven. Brenden watched the time and told me to relax. When time was up, we took the tray out of the oven and put the shells to the test. Perfect. They weren't burnt; they didn't fall apart, and they were pretty durable for holding my usual, overwhelming amount of toppings. And the plus side of these was I didn't have to worry about my abundance of filling falling out one end of my taco as I ate it.


These were definitely a great spin on the traditional taco, and a great solution if you don't want to spend all that money on a taco salad with the tortilla bowl from any "mexican" restaurant. Because we used small shells, they were the perfect size for any meal - assemble one for a snack or two for a meal. And, they looked great; you can easily impress guests with this fancy set up.

Taco Cups
Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 package small flour tortillas

Suggested Toppings (to taste)

  • corn
  • cherry tomatoes, halved
  • Avocado, diced
  • Red onion, diced
  • About 5 lettuce leaves, shredded
  • Cheddar cheese, shredded
  • Taco sauce

Directions

  1. Preheat the oven to 350 degrees.
  2. In a large skillet brown beef over medium heat.
  3. When the beef is fully cooked, drain fat and return to skillet.
  4. Add the taco seasoning as directed on package.
  5. Take a muffin pan and turn it upside down.
  6. Place the taco shells in between the muffin slots.
  7. Bake for about 10 minutes, until the shells begin to get golden and crispy.
  8. Remove from oven and cool.
  9. Fill your shell "cup" with ingredients in any order as desired.
  10. Eat it with your hand or silver wear, just make sure you enjoy!
