Date Night Dinners - Honey Mustard Chicken

Yum, yum, chicken. Brenden and I have been on a chicken kick. Chicken can be quick, easy, and fairly healthy. But more importantly there are hundreds of ways to prepare chicken. I honestly, don't think we could run out of options. Imagination is the limit here. Some of our latest favorites have been the Crockpot Shredded BBQ Chicken we had two weeks ago and the Morrocan Chicken we had before that.

This week we couldn't quite decide on a way to prepare our chicken until it was almost date night. Originally we wanted to try a pecan crusted chicken recipe we had stumbled upon during our countless hours of internet browsing. But as the days lead to date night we found we had a problem. The bag of pecans we were planning to use had become exponentially less full. Talk about snacking problems. But pecans are expensive, so we decided to forgo the pecan chicken.


Lucky for us, the recipe consisted of more then just pecans and chicken, it had a base of honey mustard and other spice, which inspired our dinner. We obviously already had all of the ingredients based on our prior plans. We found a new recipe to use, specifically for a honey mustard chicken and worked our magic. We even had a few pecans ("now for snacking") left over to use as garnish as we pleased. But honestly, the honey mustard coated chicken was flavorful and satisfying enough on its own. We didn't even miss the nuts.

Baked Honey Mustard Chicken

Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 1/2 cup honey mustard
  • 1 Tbsp lemon juice
  • 1 Tbsp dried parsley
  • 1 Tbsp dried basil
  • 1 tsp paprika
  • Salt and pepper to taste
Directions
  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Place the chicken breast between parchment paper and pound to tenderize.
  3. Pat the chicken breast dry and season with salt and pepper.
  4. In a medium bowl, combine the honey mustard, lemon juice, parsley, basil, and paprika.
  5. Pour the honey mustard mixture over the chicken, coating well with about half of the mixture.
  6. Place the coated chicken breasts on a baking sheet sprayed with oil.
  7. Place the tray in the oven and cooke for 15-20 minutes.
  8. Remove from oven and baste the chicken with the remaining honey mustard mixture, coating all sides of the chicken. The chicken should have the original bottom side facing up now.
  9. Return to the oven for another 15-20 minutes or until chicken is fully cooked through.
  10. Remove, serve, and enjoy.
