Date Night Dinners - The Magic of Cauliflower
We have gone from pasta to cauliflower. Carb loaded to carb free. But it is all delicious. Gluten free, carb free is trending like it is their job right now. And while Brenden and I aren't hopping on the bandwagon and not looking back, we are giving it a try. We love all of the creative possibilities there are to make with cauliflower, so for now we are having a fun time experimenting and tasting our new dishes.
My favorite thing to eat on bagels is egg sandwiches, and Brenden loves breakfast at any time so we immediately knew what would accompany our fancy new homemade bagels. Once we got the cauliflower bagels accomplished we knew we would have something fabulous to eat.
We each cooked our eggs to our liking, mine over easy and Brenden's was fried, added them to our bagels and topped them with our favorite additions: hummus, turkey pepperoni and lots of cheesy goodness. I knew the eggs would taste great, but what about the bagels. They looked good and they sure smelled good. But, would they meet our high bagel standards?
CAULIFLOWER BAGEL BREAKFAST SANDWICHES

INGREDIENTS
- Cauliflower Bagels
- 1 small head cauliflower, cut into small florets
- 3 Tbsp almond flour
- 1 Tbsp whole wheat flour
- 2 eggs
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp black pepper
- sesame seeds, minced garlic, minced onion, poppy seeds as desired for toppings
- Egg Sandwich
- 1 - 2 eggs
- 1 slice cheese
- Breakfast meat of your choice, we used turkey pepperoni
- 2 tbsp hummus
Rice the cauliflower. Using the larger grater attachment, send the cauliflower florets through the food processor low until all of the cauliflower is evenly shredded into small pieces. If you do not have a food processor you can use a cheese grater.
Form the cauliflower bagels. Preheat the oven to 400 degrees Fahrenheit. In a large bowl, combine the cauliflower rice, eggs, almond flour, whole wheat flour, garlic powder. salt, pepper, and baking powder. Mix well until fully combined. Refrigerate the mixture for about five minutes, allowing the flours to soak up some of the moisture. Line a baking pan with parchment paper and spray with baking oil. Remove the cauliflower mixture from the fridge and stir once more. Use your hands to create four even sized "bun" halves, squeezing the mixture so it stays together. Ours were about an inch thick. Lay each "bun" on the prepared baking sheet. Using the handle of a utensil or your fingers, make a hole in the middle of each "bun" so that it turns into a bagel shape. Sprinkle the topping on top of the bagels as desired. Place tray with prepared bagels in the preheated oven and bake for 22-25 minutes, until the bagel is dried and holds together. Turn the broiler on and broil for another 3-5, until the bagels are golden brown on top. Remove from the oven when completely cooked and let the bagels cool completely before taking them off the parchment paper.
Prepare the egg sandwich. Cook the eggs and breakfast meat to your desire. Place one bagel half on a plate. Top with the cook egg(s) cheese and breakfast meat. Spread hummus on a second bagel half. Top the sandwich with the second bagel half, hummus side down. Enjoy.
