Peanut Avocado Toast

If you know me or read my blog, you may definitely know that I'm a tad bit completely obsessed with sushi. So, the other night when I was sitting at home after a long day of work deciding what to do for dinner, it was no surprise that the oh-so-familiar sushi debate began in my head. To order sushi delivery or not to order sushi delivery. I was perusing local sushi menus, trying to convince myself I didn't need to spend the money (because when I order sushi, I order all the sushi). I wanted to try a new roll; I wanted to indulge in my favorites, but what I really wanted was the peanut avocado roll I had recently been introduced to, and have since been obsessively craving.


My go-to sushi eating buddy, Lauren, decide to go vegan this year. What?! I know. The horrors! Not because she is vegan, but because who am I going to binge on sushi with? Who will I go to a new sushi place and try just about every roll on the menu at once with? Who will not judge my sushi binges that could feed an army but I eat all by myself? Sadness, I know. But it turns out Lauren will still be my sushi accomplice, it's just she can only eat the vegetarian/vegan sushi. And actually, I think it is a win for me because I can still try hers, but she can't try mine. More sushi for Tracy, oh happy day!

When we were out for sushi a few weeks ago, Lauren tried a few vegan rolls including a peanut avocado roll. I had seen this on sushi menus quite often and always thought it sounded a bit weird and displeasing. And while Lauren, after trying the roll, didn't prefer it, I kind of fell in love with it. Fast forward a month and a half:

  1. I am sitting at home on a Tuesday night not wanting to cook and craving a peanut avocado roll (which means buying 3 other rolls, too) but not wanting to spend any money.
  2. A brief sweep of my kitchen to try to talk myself into actually cooking dinner -- I don't want to do all the work cooking entails (mostly washing the dishes that pile up when I make a meal at home), but I see I have peanuts and I see I have avocado. 
  3. Suddenly, brilliance hits me -- why pay for peanut avocado roll delivery (as delicious as it is) when I can quickly make a meal inspired by the roll with the few ingredients I have on hand (and you probably do too).


I have always enjoy a good avocado toast, so why not a peanut avocado toast?! We have already covered the fact that I like peanut and avocado together. Swap the rice for bread, and you have a similar idea. I had to make my idea a reality right away. I took a chunky slice of the sourdough I had on hand and popped it in the oven with some butter. In the meantime I mashed up the avocado with a bit of honey. And waa-laa the rest was history. I spread the sweeten avocado on the warm crispy toast. Added the peanuts and sprinkled some spices. Heaven, I was in heaven.

PEANUT AVOCADO TOAST
This recipe makes one large slice of peanut avocado toast. 

Ingredients
  • 1 thick slice sourdough bread
  • 1/2 Tbsp honey butter
  • 1/2 haas avocado
  • 1/2 tsp honey
  • 1/4 cup dry roasted, unsalted peanuts
  • 1/4 tsp (or as desired) salt
  • 1/4 tsp (or as desired) nutmeg
  • 1/4 tsp (or as desired) sesame seeds
  • 1/8 tsp (or as desired) ground ginger
Directions
Make the toast. Preheat the oven to 350 degrees fahrenheit. Spread the honey butter evenly across the top of the slice of sourdough bread. Place the buttered sour dough in the oven for about 8 minutes, until the butter is melted. Then turn the oven to broil and cook for another 2-3 minutes, keeping a careful eye on the bread. You want the bread to be crispy and golden (not burnt) on the edges and soft on the inside. Remove from oven to assemble.
Prepare the avocado. While your toast is in the oven, mash your avocado until smooth (or desired consistency), in a small bowl. Drizzle in the honey and swirls into the avocado with a spoon until blended well.
Assemble the peanut avocado toast. Spread your mashed avocado on top of your toast. Place the peanuts evenly on top of the mashed avocado, pressing gently so that they stick. Sprinkle the salt, nutmeg, sesame seeds, and ground ginger atop the peanuts and avocado.
Eat immediately and enjoy the savory sweet goodness.
