My Spin on a Tasty Sandwich
Lately I have been a little obsessed with the Mediterranean Sandwich. They seem to be popping up everywhere in some type of variation, Panera (Mediterranean Veggie sandwich), Jason's Deli (Zucchini Grillini and they have free soft serve to round out your meal!) , and Bon Fresco. But, my latest favorite has been the Powerhouse sandwich from Bean Hollow. I strongly suggest you check it out. When I go, I always start out with this sandwich, and then I treat myself with a sweet treat. Everything I have tried has been delicious so far. I am slowly making my way through their pastry and desert menu, and my friends always suggest the various coffee drinks. They even have Berger Cookie ice cream - tell me what can get better then that?! And if you have never had a Berger Cookie, then you need to make that your next priority, you haven't lived until you've had one of these treats.Now that I have rambled on about delicious, chocolate fudge covered, gooey cookies (really, you need to try them), I will get back to my sandwich cravings. After some thought, I realized that instead of spending the gas and money to buy a version of these popular Mediterranean sandwiches, I could start making them at home with little effort. And that is exactly what I did. It is as delicious as ever, and I can customize it however I want depending on what I am in the mood for that day.
I typically start out with 2 slices of some kind of wheat bread. Next I spread a layer of hummus (my favorite is roasted red pepper) on one side of each slice of bread. I then slice a variation of veggies and pile them on. Here I used cucumber, red bell pepper, yellow onion, and avocado. I then added two slices of fresh mozzarella cheese, and there you have it; a delicious sandwich.

I put the top piece of bread on top and push down a little so it will all fit in my mouth and enjoy. You get a mixture of great, fresh flavors in every bite. I can't tell you have good this is. You just have to try it for yourself. And if you don't like one of these veggies, simply take it out or swap it for one you enjoy more. You can also heat it with a sandwich press to put another spin on it.
Other toping recommendations: tomatoes, zucchini, eggplant, alfalfa sprouts, squash...or anything you can imagination. If you have any different suggestion feel free to share. I am always up for trying something new :)
