Date Night Dinners - Soup For A Rainy Day

Summer isn't a time one craves hot soup for dinner. Most people want salads, fresh fruit or maybe a cold soup like vichyssoise. But with all the major thunderstorms we have been getting, a nice bowl of soup is exactly what Brenden and I wanted to feast on after puddle hopping from work to errands to home.

I am all for easy recipes, but sometimes recipes are just too easy. How can a recipe be too easy you ask? What I mean by that is sometimes a recipe is so easy that it isn't really a recipe, it is more a decision to put a few things together that never truly blend, making something edible but not magnificent. Take tuna and mayo for example, it makes a good dish but when you eat it, it is just tuna and mayo. I am always looking for that extra umph to make it fabulous, something I can't easily pick apart, like tuna salad (an extra few added ingredients go a long way) or a tuna sandwich (the flavorful bread is what makes it whole).


Date Night Dinners - Tomato Paste Is Not Tomato Sauce

Despite reading the recipe three times before making the trip to the grocery store to purchase the ingredients we need for this dish, despite checking the pantry twice to confirm we had (or didn't have) enough of all of the ingredients, and despite making a list of the ingredients we officially needed to buy, I somehow still messed up. Maybe it's because I was too preoccupied with making sure my 2x gas points coupon worked or because I was day dreaming about the jumbo left over cookies I could eat once I got home. Maybe it's just because it is summer time and I am still 16 at heart - my brain wants to shut off, because really, who does work in the summer. Not this girl, who lusts for summer with long days, getting sun-kissed at the beach, all year long...at least that's how my mind wants it to work.


Date Night Dinners - Swoodles and Butter

First there was the noodle, then came the zoodle, and now we have the swoodle. I have been wanting to make spiralized vegetable noodles for, well, forever. I had the recipes; I had the vegetables; I had the inspiration and motivation. What was the problem then, you ask? I didn't have a spiralizer. Without a way to spiralize the vegetables, you can't really make a spiralized vegetable based dish. Instead, you tend to just have a giant whole vegetable with sauce smeared about - not quite as cool or tasty.

"I want to be a cooker!" I repeatedly told my parents this growing up. "I want to be a cooker; I want to be a cooker." Now one might think a child of age 3 or 4 or 5 who stays true to their word of wanting to become a cooker would follow the career path of a chef. After all, a cooker is to a young child as a chef is to an adult. I could grow up working in restaurants, taking culinary classes and going to a culinary university, apprenticing with great chefs and of course landing myself as a chef, fulfilling my dream and childhood statements, on food network next to Gordon Ramsay and Rachael Ray.


Date Night Dinners - Potstickers To Enjoy Inside And Out

I love potstickers. Love, love, love. Actually I love the potsticker wrapper. To me, the middle is usually bland, strangely textured and leaves little to be desired. When I order potstickers at a restaurant, I usually leave my plate looking like a half eaten mess - no potsticker wrappers to be found but picked at middles scattered about.

Brenden and I just solved that problem. This week, we made pad thai potstickers and they were amaze-stickers! Get it, get it? The inside was just as good as the outside. Potstickers are no longer a shell for me to pick around.



Date Night Dinners - The Magic of Cauliflower

We have gone from pasta to cauliflower. Carb loaded to carb free. But it is all delicious. Gluten free, carb free is trending like it is their job right now. And while Brenden and I aren't hopping on the bandwagon and not looking back, we are giving it a try. We love all of the creative possibilities there are to make with cauliflower, so for now we are having a fun time experimenting and tasting our new dishes.

Date Night Dinners - Crockpot Carnitas and Cauliflower Rice

The great thing about crockpots is that they are suitable to use at any point in the year. They are perfect for wintertime comfort foods. They keep the kitchen from heating up too much in those hot sticky summer months. If you want a lazy day, throw all your ingredients in the pot, kick back and binge on netflix until its done. Or, if you're busy and on the go, get the crockpot going on your way out for the day and come back to a house filled with the smell of dinner goodness.



Date Night Dinners - Brenden's Burgers

Summer is here! Okay, maybe not, technically. But, with the alternating humid, 90 degree days with bright sunny, breezy days, it sure feels like it is here, and hopefully to stay. While I am in love with this weather, Brenden is quite the opposite of me. Remember the misery I was feeling just a few short months ago, with my frozen fingers and toes, well that is the misery Brenden is feeling now, just replace frozen with melting, and fingers and toes with entire body...at least I am finally comfortable.

We've made our own pasta, we've redeemed ourselves with a sweet and decadent passover dessert, and we've learned the secret to making a flakey, buttery popover pop. But, we are still anything but pros. Every time we try a new recipe, we grow more confident in a our skills. But every time we search for a recipe to make, we pass up a few because we think it is beyond our skill level. Not this week.


Date Night Dinners - Homemade Pasta Dough

There is no use denying it anymore. I have a problem. I am obsessed with making and eating fresh, homemade pasta. Phew I said it. After all, the first step to recovery is admitting you have a problem, isn't it? But is this really a problem I want to, or even need to, get over? I guess that is for Brenden to decide. When he gets tired of eating pasta for every meal we will call it quits...maybe. It's just so easy, and delicious!
