I swam and and I ran today.

Then I adventured to Washington, DC, with Lauren, where I explored the National Postal Museum for the first time. I went for the Postsecret Exhibit, but found the entire museum to be totally awesome. They had a stamp display where we got to see all kinds of stamps, pick out a few old ones "to start our own stamp collection," and even "make" our own stamps (sadly mine never got emailed to me, and I didn't think to take a photo of it on the screen :(. Mine was awesome though, let's just say it involved my face and an elephant. I know; tragedy it didn't send, and maybe slightly ironic since it was from the postal museum?!) I will definitely need to go back for a more extended visit.

Date Night Dinners - Brenden's Burgers

Summer is here! Okay, maybe not, technically. But, with the alternating humid, 90 degree days with bright sunny, breezy days, it sure feels like it is here, and hopefully to stay. While I am in love with this weather, Brenden is quite the opposite of me. Remember the misery I was feeling just a few short months ago, with my frozen fingers and toes, well that is the misery Brenden is feeling now, just replace frozen with melting, and fingers and toes with entire body...at least I am finally comfortable.


Date Night Dinners - Veggies All Around

"Let's make something meatless," said Brenden

Have my ears deceived me? Am I hearing him correctly?

"You want to make something without meat?" I questioned.

"Yea," he replied.

Have I died and gone to heaven? Okay, maybe I am being a little dramatic. But seriously, Brenden being the one to suggest going meatless this week was quite stunning. And on top of that it only took us one link and three recipes to settle on what we would make. This kind of decision making for us had to be too good to be true. I mean, if we pick out a meal in under an hour we are usually praising ourselves on our good work and quick thinking. This type of decision making is practically unheard of between the two of us.



Date Night Dinners - The Ultimate Burger

Burgers, burgers, burgers! How can you go wrong with a big, juicy burger topped with a slice of melted, gooey cheese, covered with perfectly cooked caramelized onions, and piled (like a set of jenga blocks) with homemade sweet potato fries?! Well that's just it, you can't - even when the burger is made entirely of veggies and grains! That's right, no meat to be found, whatsoever.


Now before you turn your nose up and click away, let me defend the "Ultimate Burger." Let's start with the actual burger patty. This burger has so much flavor. The seasonings, the beans, the quinoa, the cheese - all of these elements compliment each other in the perfect way to bring it to life. First there is cheese. I think this is the secret weapon, because not only does it help to bind all the ingredients together, but it doubles as a flavor enhancer and then triples as a burger moistener. It really plays a key role in the entire life cycle of this burger. 


Then there is the quinoa. This ingredient is what takes the traditional bean burger to the next level. The small round gems enhance the texture so that it does not turn to mush with each bite or crumble before you even get to taste the thing, as so many bean burgers do. The quinoa, once cooked, also adds a nice firmness to the outer layer that is so hard to find beyond the traditional burger. But never fear, that moist, softness is still captured on the inside, and you get just the right amount of every texture in each bite. 




Next, there are the seasonings, of course. You must never forget those. The combination of seasonings for this burger creates the the perfect amount of heat (although Brenden can never really get enough spice, but it was perfect for me). I was weary about the chipotle chili powder the recipe called for at first, but after wafting the smell and then tasting it, I realized it was must. This spice adds yet another depth of flavor. You don't get this taste with regular chili powder. And, remember less is more when it comes to seasoning. You don't want to drown out the flavors by adding a bunch of your favorite other seasonings. Trust me on this one, the few the recipe calls for really is enough, anything more would just take away from the burgers greatness.


Now when I say less is more, take it with a grain of salt because this "Ultimate Burger" is nothing without its toppings. Melted Gruyere cheese, caramelized onions, and homemade sweet potato fries, need I say more?! Yes. I need. All the toppings are just melt in your mouth goodness - in fact my mouth is watering as I type. The biggest surprise was the sweet potato fries. Brenden and I were both hesitant of the added work these would entail, but our curiosity got the best of us, plus we wanted to try all the components (although we did skip the added fried egg from the original...next time though). And, the added effort was well worth it. The burgers would haven fallen short without them. The fries truly enhanced the flavor and texture of the overall dish that much more. The fries were seasoned with similar spices as the burger rather then the traditional sweetly seasoned sweet potato fries. This made the burgers just that much more spicy, but the sweet potato itself balanced the spice nicely making it enjoyable rather then overwhelming (salty and sweet...sweet and spicy...you get the idea). Honestly, I could not stop reaching for that "one last fry" and tucking it between my burger and the bun to be devoured.

Cheesy Quinoa Burgers Topped with Sweet Potato Fries and Caramelized Onions

Ingredients
  • 2 medium to large sweet potatoes, cut into 1/2 inch thick strips
  • 1/2 tsp chipotle chile powder
  • 1/4 to 1/2 tsp cayenne pepper
  • 1/4 tsp paprika
  • salt and pepper to taste
  • 4 TBSP extra virgin olive oil

  • Cooking Spray
  • 2 large yellow onions, sliced thin

  • 2 cups quinoa, cooked
  • 1 cup cannellini beans, drained, rinsed, and mashed
  • 1/2 cup panko bread crumbs
  • 1 large egg
  • 1 clove garlic, minced
  • 1 tsp chipotle chili powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup sharp cheddar cheese, shredded
  • 5 slices gruyere cheese
  • cooking spray
  • Burger buns
Directions
  1. Preheat oven to 425 degrees Fahrenheit.
  2. Place cut potatoes in a large bowl and drizzle with olive oil, chipotle chili powder, cayenne, paprika, salt, and pepper.
  3. Gently toss with your hands make sure seasonings are spread evenly, coating each slice.
  4. Spray two baking sheets with cooking spray.
  5. Spread the potato slices evenly into one layer on the baking sheets.
  6. Bake for 15-20 minutes.
  7. Remove potatoes, flip them and return pans to the oven.
  8. Bake for another 15-20 minutes.
  9. Remove when potatoes are crisp but not burnt on the outside, and fully cooked and soft on the inside.
  10. Set aside to cool for burgers.

  1. While the fries are baking, begin to caramelize the onions.
  2. Heat a large skillet on medium.
  3. Spray the skillet generously with cooking spray.
  4. Add the onions and cook, stirring frequently until caramelized, about 30 minutes.

  1. While the fries are baking and the onions are caramelizing, begin the burger prep (just make sure to keep and eye one both).
  2. In a medium bowl, combine the quinoa, mashed cannellini beads, bread crumbs, egg, garlic, chipotle chili powder, salt, and pepper.
  3. Mix well with your hands until all the ingredients are well combined and moistened.
  4. Next, evenly mix in the cheese.
  5. Form mixture into equal sized patties, we got five fairly large ones out of the batch.
  6. Spray a skillet with cooking spray and heat on medium.
  7. Cook each burger patty, until warm all the way through, 5 minutes per side.
  8. During the last 2-3 minutes of the second side, add gruyere cheese slices and the cheese to melt as desired.
  9. With all the components prepared, assemble burgers to your liking. We decide to go bottom bun, burger, caramelized onions, fries, and then top bun.
  10. Press the burger to fit it in your mouth and enjoy!

Date Night Dinner's

Tonight was burger night! We haven't had burgers in forever, and I was in the mood for something new. Sorry all of you meat lovers, these burgers had a bit of a spin on them - they were meatless and delicious. Brenden and I have experimented with some black bean burgers in the past and have grown very fond of the recipe we have tweaked into perfection for ourselves. But even the best recipes get bland after a while. So, when I came across this meatless burger recipe I was more then open to trying the new ingredients it incorporated and new flavors it was sure to bring. And excitedly, Brenden was ready to delve into the new burger experiment as well.

This burger called for kidney beans instead of our traditional black beans. It enhanced the flavor palate by adding a variety of ingredients besides just spices. And, it taught us a new way to go about making a bean burger. It only took me one bite to decide they were my new favorite; it totally blew our old black bean burger recipe out of the water (though both are good and recommended). But believe me, with this one, there were no leftovers. We ate every bite, and there were defiantly a lot of bites! I was quite full and satisfied after this meal.

We also had the bright (but maybe not so bright) idea to accompany our burgers with popovers. Good thing we decided to buy burger buns at the last minute in addition because I missed the part in the recipe where it said let the batter stand for one hour. So the pop over I was going to eat with my burger was still a puddle of liquid ingredients for about 40 minutes after I was done eating my burger. And, we can't forget the fact that once the popovers were done, they weren't actually popovers because they did not pop! So much for that good idea. Oh well, they still made a good doughy/biscuit treat to munch on as dessert while we lounged and watched a movie.

Spicy Bean Burger
Recipe adapted from skinnyms.com, Spicy Southwestern Burger

Ingredients

  • 2 Tbsp Olive Oil
  • 1/2 cup red onions, diced
  • 1 clove garlic, minced
  • 1-15.5 oz can kidney beans (we used dark red beans), rinsed and drained
  • 1-4 oz can diced green chili peppers (we used mild), drained well
  • 1 -8 oz can whole kernel corn, drained
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 cup bread crumbs
  • 1/4 cup shredded cheddar cheese
  • 5 potato hamburger buns
Directions

  1. In a large skillet add 1 Tbsp oil.
  2. Over medium-low heat, saute onions until tender (about 5 minutes).
  3. Add garlic and saute for another minute.
  4. Add kidney beans, green chili peppers, and corn, continuing to saute until beans soften up (about 4 minutes).
  5. Add oregano, chili powder, cumin, and cayenne pepper, stirring until thoroughly combined.
  6. Mash the ingredients with a potato masher or fork until beans are well mashed.
  7. In a large bowl, pour bean mixture, bread crumbs, and cheese, mixing until well combined.
  8. Set aside, allowing to cool about ten minutes.
  9. Once cooled enough to handle, make five burger shaped patties.
  10. Add remaining Tbsp of oil to a non-stick skillet.
  11. Over medium heat, cook patties until they are browned on both sides and heated all the way through (about 10-12 minutes).
  12. Serve patties on buns and add desired toppings. (I added avocado, and would try some BBQ sauce next time, but it would mesh with a lot of other typical burger topics so feel free to go wild. Remember, it has a ton of flavor so it is great solo as well.)

Popovers
Recipe adapted from worldofaerin.aerin.com, Neimen Marcus Popovers

Ingredients
  • 3.5 cups whole milk
  • 4 cups all-purpose flour
  • 1.5 tsp kosher salt
  • 1 tsp baking powder
  • 6 large eggs, room temperature
  • Cooking spray
Directions
  1. Warm milk in a saucepan over the stove or the microwave (about two minutes, until warm to touch).
  2. In a large mixing bowl, sift flour, salt, and baking powder.
  3. In a seperate bowl, crack eggs.
  4. With a whisk, fork, or electric mixer, whisk eggs until foamy (about 3 minutes).
  5. Mix in milk.
  6. Gradually add in flour mixture and beat for 2 minutes.
  7. Let batter rest at room temperature for about an hour.
  8. Preheat over to 450 degrees.
  9. Spray muffin pan generously with cooking spray.
  10. Fill cups with batter, almost to top.
  11. Place muffin pans on cookie sheets.
  12. Place in oven and bake for 15 minutes (do not open oven to look during this period).
  13. Turn oven down to 375 and back for 35-20 minutes (popovers should be a deep golden brown).
  14. Remove and let cool.
  15. Enjoy (as a popover or biscuit).
