Date Night Dinners - Buffalo Bonanza
Now I know I say this a lot, okay maybe more then a lot (probably every other date night dinner post), but this one definitely takes the position of top three. This meal was fan-frickin-tastic. So, so good! We were deciding between three recipes this week but as soon as Brenden noticed the word 'buffalo' the decision seemed simple. Brenden loves everything spicy, and being from upstate NY where the motto is to put hot sauce on everything, he knew we couldn't go wrong with buffalo macaroni and cheese. I also lived around there during college, and the buffalo chicken wing dip was one of many of my guilty pleasures. Lately I have been looking for some type of simple buffalo chicken recipe to get me through those college day food cravings. We found this dish and it met all of our criteria. Spice for Brenden; a bit healthier then college gluttony for me, and cooking ease for the both of us. The chicken was made in the crock pot, so that was as easy as 1-2-3. We love our crock pot. And after melting the cheese into a nice sauce we only had a bit of stirring to do before we popped in the whole thing in the oven.
This isn't your typical beginning of summer, 90 degree with a heat index of 101, dish, which had me a bit worried. But it ended up being the perfect meal for our night. We prepared the meal, went for a little run as it cooled, and came back with ravenous appetites, dying to taste into our masterpiece. The aroma of buffalo sauce and macaroni cheese had filled the kitchen by the time we came back to eat, and it made the dish that much more appetizing.
There was a perfect ratio of cheese to hot sauce and chicken to pasta. This is a meal I think we nailed on our first try. I wouldn't do anything differently (even though before tasting it I suggested that we should have added caramelized onions, gotta sneak the veggies in there somehow). There was a good amount of spice, that satisfied Brenden without making me want to fire hose my mouth down. And a perfect amount of cheese to tone down the spice without drowning out all the other flavors.
Although this is a "healthier" version of buffalo chicken mac and cheese, it is definitely is not on top of the health pyramid. I have really been trying to tighten up my eating lately so I told myself I could only eat a certain amount of the dish. If you noticed from some of my past post, when Brenden and I have date night, we don't let anything hold us back and we tend to stuff our stomachs to the max. This week I tried to be aware of how much I was putting on my plate. And, it worked out well. This meal was so good I was truly satisfied after just one serving (about 1/8) of this dish. Plus I was excited I would be able to eat it for several days later without remaking it from scratch because we had so much left over and it tasted so good. But the best part was I told myself I could eat some ice cream if I did well on the actual meal. This meant Brenden and I were able to conclude a perfect night by sharing one of my favorite, mint chocolate chip ice cream sandwiches.
Crock Pot Buffalo Chicken
Recipe adapted from organizeyourselfskinny.com, Slow Cooker Buffalo Shredded Chicken
Ingredients
- 1.25 lb boneless skinless chicken breast
- 1 (1.5oz) powdered ranch packet
- 1/2 cup chicken stock
- 1 Tbsp butter
- Cut the excess fat off the chicken breasts and place in crock pot.
- Sprinkle ranch seasoning over chicken.
- Pour in hot sauce and chicken stock.
- Turn the chicken a few times to make sure all pieces are full coated with the seasonings and everything is well combined.
- Cook on low for 5-6 hours.
- Take chicken out and shred.
- While the chicken is out of the crock pot, add the butter to the remaining liquid mixture and let it melt.
- Add the shredded chicken back into the crock pot and coat with liquid mixture.
Buffalo Chicken Mac and Cheese
Recipe adapted from organizeyourselfskinny.com, Healthy Buffalo Chicken Macaroni and Cheese
Ingredients
- 8 ounces macaroni noodles
- 1 cup 1% milk
- 1 Tbsp flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 2 cups cheddar cheese, shredded
- 1/4 italian mixed cheese, shredded
- 1.5 cups shredded buffalo chicken (see recipe above)
- 1/4 cup panko bread crumbs
Directions
- In a medium saucepan bring water to a boil and cook pasta as directed so that it is al dente.
- When pasta is cooked, drain and set aside.
- Preheat oven to 350 degrees Fahrenheit.
- In a medium saucepan, over medium heat, whisk together the chicken stock, milk and flour, until flour is completely dissolved.
- Continue to cook mixture on medium heat for 5-7 minutes or until it gets bubbly.
- Stir in garlic powder, onion powder, salt, and both cheeses, whisking until smooth (about 3 minutes).
- Place pasta in a 9x13 inch baking dish.
- Mix the shredded buffalo chicken in with the pasta.
- Pour the cheese sauce over pasta ad chicken in thirds, stirring as you add to make sure everything gets covered and evenly coated with the cheese.
- Sprinkle bread clumps on top of the mac and cheese dish.
- Place the dish in the over and bake for about 40 minutes, or until bubbly.
- Let the dish sit for a few minutes to cool slightly before enjoying.
Date Night Dinners - A Winter Barbecue
Luckily there wasn't much prep to be done for the meal this week. We decided to go with a crock pot barbecue chicken which turned out to be super easy and super delicious. Besides trimming the fat off the chicken pieces, you pretty much throw a bunch of ingredients into the crock pot, stir and wait six hours to enjoy. I have been itching to try a barbecue chicken ever since idea of crock potting came about this season. When I go out I always see pulled pork bbq, which I love, except for the fact I don't eat pork. So the thought of substituting it with chicken at home makes my mouth water. I don't understand why it is so hard for restaurants to do the same. Any-who, as usual, we ponder recipes online, searching for the perfect one, and, I really think we nailed it this time. The instructions required making a rub out of seasonings to cover the chicken pre-barbacue sauce and it was a brilliant idea. The rub added a nice layer of depth to the chicken and the sauce, making the flavor pop that much more in your mouth. Each bite was a sensation of joy and goodness.
The fact that we used one of our favorite sauces, Sweet Baby Ray's didn't hurt matters either. Although I eventually want to build up our skills to making our own barbecue sauce, for a truly homemade meal, I chickened out this time and left the flavor up to Baby Ray. Plus, in this weather, the level of difficulty for the alternative was a win. After all, all we had to do was open a bottle and pour, how much easier does it get?! And it required less time running in and out to buy ingredients since we always have some BBQ sauce in stock.
Don't worry though, we still gave the meal a twist. Instead of the traditional sandwich bun, we decide to pair the pulled barbecue chicken with a corn bread casserole of sorts. Brenden's dad made a an amazing cornbread casserole on Christmas and I have been dying for that taste to be in my mouth again ever since. Seriously, could have eaten the whole pan myself! We figured barbecue was the perfect night to try out our own attempt at the dish. We decided to combine a few recipes we found online to make it as simple as possible and to our tastes as possible. Here is what we needed: 1 box cornbread mix, 1 can of corn (drained), 1 can of creamed corn, 1/2 cup butter (melted), 1 cup cheddar cheese (shredded). Now here is what you do: Mix all of the ingredients together, place in a greased casserole dish, and bake on 350 for 50-60 minutes. Simple, I know, and so worth the wait! You have to wait about 6 hours for your chicken anyway, so it is not like you will have to rush to have everything finish at once.
Crock Pot Barbecue Chicken
Recipe adapted from pamelasalzman.com, Slow Cooker Barbecued Pulled Chicken
Ingredients
- 2 boneless, skinless chicken thighs, trimmed of fat
- 2 boneless, skinless chicken breasts, trimmed of fat
- 2 tsp chili powder
- 1 tsp paprika
- 1/4 tsp cayenne pepper1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1.5 cups barbecue sauce (We used Sweet Baby Ray's)
Directions
- Place the chicken in the crock pot.
- Mix together the chili powder, paprika, cayenne pepper, salt and pepper in a small bowl.
- Rub spice mixture all over the chicken, covering all pieces.
- Pour 1 cup of barbecue sauce over the chicken and mix to coat all pieces.
- Cover and cook on low for about 6 hours.
- After 6 hours, or once chicken is fully cooked, remove piece and shred on a plate.
- Return shredded chicken to crock pot.
- Pour the remainder of the barbecue sauce in the crock pot.
- Stir to combine and coat all of the chicken well.
- Continue to cook on low for another 30 minutes (this should help absorb the liquid as well as really let the chicken soak up the barbecue flavor so it is in every bite).
- Remove and serve as desired. It is great plain, but you can also serve it as a sandwich, with a salad or whatever your imagination can think of. We went with corn casserole this time around.
Date Night Dinners - I hope you like spicy!
Dinner was spicyyy - that is the only thing I have to say about this meal (ok, not the only thing, who are we kidding it's me). But honestly, if you like spicy, you will like this. The crock pot was brought out for the year when my dad made beef stew for a family dinner (which was delicious by the way), and a whole new world of possibilities opened up to us. How could we have forgotten about the crock pot?! The crock pot is one of the most amazing pieces of cookware ever invented. There are so many things you can make with a crock pot, and of course, everything taste better when made in it.
So it was settled - we were making a dish using the crockpot. But what dish? We scoured the internet for the perfect crock pot recipe and we came across a few choices. After reading out finalists over and over we crossed our fingers and hoped this Salsa Chicken would be the one. Now, I wouldn't say it was perfect, and I am not sure I will be jumping to try it again right away (although I will eventually with some alterations), but it was a good meal, and the chicken was cooked amazingly. It was just the seasonings I would adjust.
Now I really hope you aren't completely turned off by this meal because as I mentioned it did turn out pretty decent, just not the best; as you can see it looks pretty delish, and if nothing else, it is so, so, sooooo super easy to make! I promise, if it was a complete disaster I would not post it. Believe me, there is a reason you haven't heard about our homemade tomato soup (or should I say tomato water) or our chocolate wasabi pie (it sounded like a good idea at the time). But back to the Salsa Chicken. We spiced ours up by making wraps with all of our favorite toppings which made it even tastier. I added avocado to mine. I mean come on salsa, avocado, the two go hand-in-hand. We also garnished our wraps with some cheddar cheese, onions and sauteed zucchini (for me, remember Brenden is a plain jane) to make it extra filling and yummy in our tummies.
Crock Pot Salsa Chicken
Recipe adapted from www.heandsheeatclean.com, Salsa ChickenIngredients
- 3.5 lbs boneless, skinless chicken breasts
- 2 large diced tomatoes
- 1.5 cups of your favorite salsa
- 2 Tbsp garlic powder
- 2 Tbsp red pepper flakes
- 1 Tbsp crushed black pepper
- 1/2 tsp cayenne pepper
- Trim the fat from the chicken breasts.
- In a medium bowl, mix all ingredients from tomatoes through the end.
- Coat each chicken breast with mixture and place in crock pot.
- Pour remaining sauce/seasonings over chicken in crock pot, mixing it slightly to distribute evenly.
- Cook on low for about 7-7.5 hours.
- Once fully cooked, remove chicken from the crock pot, draining extra liquid, and shred with two forks.
- Eat plain in a wrap, sandwich, or salad with your favorite ingredients and enjoy.
