The Pursuit Of Happiness: 2.199
Morning swim. And, my 2000+ minutes for the Winter Water Challenge. Plus an evening run to continue my training for an upcoming race. And, a love a peanut butter; I'll def take a jar that's as big as me like on my day-by-day calendar today. The Pursuit Of Happiness: 2.192
A little early, but since Brenden is working at night tomorrow, we decided to celebrate chili day today! We made a lentil chili and it was oh so good, and pretty easy, which makes it even better. We sautéed onion and red pepper, then added garlic and chili powder. After that we cooked together lentils, tomatoes, broth and a bay leaf. After the lentils were soft we removed the bay leaf, pureed some of the chili and added salt, pepper, chipotle chile powder, and red pepper flakes until al the tastes were perfectly balanced. I garnished mine with avocado and cheese and Brenden with sour cream. Yummy in our tummy. Also, my cousin Jared sent me a picture of there new restaurant signs -- my logo light up and shinning bright on H Street in DC, It looks amazing and a feel so good about it.

It's chocolate mint day. What better way to celebrate then by eating the last of my favorite mint chocolate ice cream cookie sandwich! How did you celebrate? 🙌🍫🍦 🍪The Pursuit Of Happiness: 2.158
Another fabulous calendar day. Seriously this thing is spot on; I would post each day if I wasn't worried I was the only one so in love with it. Such a great morning pick me up.The Pursuit Of Happiness: 2.157
Popcorn, pancakes, and Pretty Little Liars for popcorn day. Who doesn't love an alliteration…and all of those things?!The Pursuit Of Happiness: 2.152
From the end of the day backwards. I made a fritata (!!!), and I am so overly excited about it. I've been wanting to make a fritata for at least a year -- probably since I got my cast iron pan -- and I finally found the perfect recipe for my first try. A fritata with onion, garlic, spicy chicken chorizo, roasted red peppers, chickpeas, smoked paprika, spinach and cheese, inspired by food52. It popped with flavor, and was so filling. I just wanted to keep shoveling it into my mouth. I can't wait to eat leftovers for lunch and then make another tomorrow!
I signed up for my first race in 2016, the Hot Chocolate 15K, and I am more then pumped. I don't know if I'm more excited about the run or the swag. Together it is going to be fabulous, and I can't wait to get myself back in gear and going.
Earlier today I received a surprise gift card from my cousin's to go to their restaurant, DC Harvest, as a thanks for some design help. The gift card looked so good. I am so happy and excited to get a gift card to use toward their delicious food, at their amazing restaurant. It was so heartwarming and I feel so appreciated by my cousins.
Before that was my day-by-day 2016 calendar. I am still so in love with it. Just about everyday has been spot on, and each "happiness is…" is pretty much me to a "T." Today was balloons, and I don't think many people love balloons as much as me. In fact, I think I should buy myself one to go with this calendar day (or maybe have Brenden pick one up since it is 10:30 pm and I'm in my PJs), it's been a couple of months since we had a balloon floating around our house.

New calendars are one of my favorite parts of the new year. A new theme to draw inspiration or humor or laughter from, new designs, illustrations and artwork to look at, and, with this year's 12-month calendar, new holidays.
According to my new 2016 calendar, today is spaghetti day. So what else was there to do but eat spaghetti for dinner. And, even better, Brenden made an awesome oil and garlic sauce to go with it, laced with cheese and oregano, thyme and pepper. It was so, so good. I mixed the sauce into the spaghetti and added some goat cheese and Italian turkey sausage. Then, I topped it with a perfectly cooked over easy egg. Fantastic! It truly hit the spot! In fact, I'm still thinking about it, and I can't wait to eat the leftovers for lunch tomorrow.
Happy 2016; happy new calendar, and happy tummy. I love it all so much.

1. After searching the internet for a while with no success, I decided to make my own, simple 2016 year-at-a-glance calendar. It's just to my liking, and I am super excited to start using it in less then a month. It will definitely help me keep track of all my dates at work.2. It's already the fifth night of Hanukkah, but I finally (and excitedly) heard the Adam Sandler Hanukkah song on the radio. So great; it never gets old, and it makes my Hanukkah feel much more complete. And, because it's great, I listened to the new version on youtube to continue the celebration.
3. I spent another part of my evening with my mom -- lighting the menorah, exchanging gifts (I got a Cinderella designed memory box), and puzzling. I am so, so close to being done. I finished the waves and now only have the water, and a handful of pieces, left.
4. Being productive feels great! I've been cooking and cleaning and doing all the things. Tonight I was pumped to make a chicken ramen soup that I've been dying to check off my list. It turned out a tad salty for my taste, but it has definite potential. I also have to work on my soft egg making. But I still had no problems gobbling it all up. Nomnomnom.

Super excited for my 2016 day-by-day calendar. It's all about happiness. And it was delivered today. Also, I filled my craving for a Wegmans subs. Tuna on everything bread. Nom. Nom. Nom.
