The Pursuit Of Happiness: 2.146

Disney World! Need I say more? I need! So, so fun exploring Disney with Brenden. We had a long, fun, festive day starring with Magic Kingdom and ending with the illuminations show at Epcot for my cousin Ben and Julia's dessert party, before there wedding tomorrow. We hit up Animal Kingdom somewhere in the middle, which included one of my favorite parts of the day, an animal safari and the everast exposition ride. At Magic Kingdom we rode on the classic "it's a small world," the haunted mansion, little mermaid, and Winnie the poo. We saw Cinderella's step mother and sisters and her castle. We caught a glimpse of diffent animals at Animal Kingdom. We "traveled" the different lands at Epcot. It was all just amazing, and I can't wait to do it again.

Date Night Dinners - Appetizer Night

This week we have gone from celebration to celebration, and we still have more to come with Independence Day celebrations throughout the day and even the weekend (omg I may pop). On Sunday I had my graduation party and my family and friends came out to celebrate with me. Besides being super thrilled to see and talk with everyone who showed up, we were able to enjoy a feast.


My parents decided to get the party catered by Beefalo Bob's so we had a barbecue of hotdogs, hamburgers, and chicken and veggie kabobs accompanied with sides of corn on the cob, potato salad, pasta salad, baked beans and corn bread. And don't forget about the appetizer and desserts. Lauren and I set up an awesome salsa bar including six different types of salsa and guac along with three types of chips (and yes I did make the description cards...remember to hit me up on tringeldesign.com if you like my work). And for dessert we had a plethora of cupcakes from Touche Touchet, a miniature dessert tray from SugarBakers for those who didn't like cupcakes, and best of all a fabulous cookie cake homemade and decorated just for me by the infamous Lauren. Her cookie cakes are seriously the bomb, they taste delicious and always look amazing; she is truly talented.




We have been living on leftovers since my party, and have almost finished what we didn't give to grassroots...just in time to celebrate some more. Brenden turned 25 yesterday and I had a fun birthday night/present planned. Although his birthday fell on our Thursday night date night dinner, I decided to push ahead with my plan and take him out for a surprise dinner at Medieval Times. Since I hadn't upgraded us to the birthday pack I decided to take him out for an early birthday cupcake of his choice (again at Touche Touchet…because we didn't get enough sugar on Sunday). He chose a chocolate raspberry cupcake, which he thoroughly enjoyed, and I tried a pretty tasty chocolate peanut butter cookie.


Now when you go to Medieval Times, they tell you to get there an hour early so you can mingle and pretty much spend more money buying drinks and souvenirs and tchotchke's (yes I taught Brenden this word last night). And while we enjoyed ourselves in our hour of roaming and drinking, I know us and I decided we should get or make a little snack to hold us over while we waited for our dinner and show.


This week we made date night into an appetizer affair. We had a few options, but of course in honor of Brenden's big day, went with the most carb filled one we could find. We made cheese stuffed garlic bread. Yum! Cheese, garlic, and bread, do I really need to say anything else to convince you to make this. Negative. But in case, for some crazy reason you are still not convinced, I will tell you a little bit more about this amazing concoction.


This bread was pretty simple to make, the hardest part was getting all of the ingredients stuffed into the cuts we made in the loaf of bread. But the whole thing is baked, which means everything melts, so even if you can't stuff the cheese and garlic onion filling into the bread as much as you want, it will inevitably drip down to fill ever crevice with gooey goodness. Thus, every bite has garlic and cheese and goodness. There is no bad piece of this bread, honestly. I could have eaten the whole loaf as my dinner. But, be warned, this bread is very gluttonous, and while I want to make it again, it should probably only be prepared on special occasions…I need to limit myself somehow.


Fortunately I knew there was a feast coming so I was able to control my intake of bread and butter (did I mention the recipe called for caramelized onions, that makes it healthy right?!). So, with our belly's happily filled with a not so fancy but totally indulgent appetizer we headed off to watch the jousting and eat chicken with our hands.

Extra Cheesy Stuffed Garlic Bread
Recipe adapted from householdartsandscience.wordpress.com, Bloomin' Onion Bread


Ingredients
  • 1 unsliced loaf of sour dough bread
  • 6 Tbsp butter
  • 1 onion, sliced thinly
  • 3 cloves garlic, minced
  • 6 oz sharp cheddar cheese, thinly sliced
  • 6 oz monterey jack cheese, thinly sliced
Directions
  1. Preheat oven to 350 degrees
  2. Cut the bread lengthwise and then widthwise about 3/4 of the way down. Make sure not to cut through the bottom of the crust.
  3. In a large skillet over medium heat, heat the butter and add the onion and garlic.
  4. Stir occasionally until onions are caramelized, about 20 minutes.
  5. Place the bread on a very large sheet of foil on a baking tray.
  6. Insert cheese slices between each cut.
  7. Drizzle butter and onion mixture over the bread and into each cut. It may help to pour this mixture into the slices with a small spoon.
  8. Wrap excess foil completely around stuffed bread.
  9. Bake for 15 minutes.
  10. Unwrap the brad and back for 10 more minutes, or until cheese is melted.
  11. Remove from oven, pull off a piece of bread and enjoy.

Happy Birthday to my love :). Spent the evening celebrating Brenden's 25th Birthday, woo he is old now too. We went to a bakery where he got his birthday cupcake dessert and then we spent the evening cheering on the blue knight and eating with our hands at Medieval Times.

Ummm, have I ever told you I have the most amazing family and friends. I had my graduation party today and it was better then I could have imagined: good food, good music, and amazing people. I can't believe all the people who came out to support and celebrate with me. It was amazing. Thank you everyone so so much, you have no idea how much you mean to me :D. I hope everyone had as much fun as I did and I can't wait to see you all again!

The Pursuit Of Happiness - Entry #323

Donna Jean's Bridal Shower was a success. It was a lovely time with her family and friends. The MOH did a great job planning and setting up, and it think everything we made was beautiful and cute (especially my clever [thanks Pinterest] popcorn cups and kiss [not to toot my own horn]). I Have Mastered The Arts



It has been a crazy week, but not in the kind of crazy I have expressed in my last few months of posts. It was a good crazy, a whirlwind of emotion and celebration. I am finally done, as I have stated a few times before and this week was the culminating event. I graduated. I can't believe it is actually over. I walked across the stage; my parents and Brenden cheered; I got hooded and celebrated with my family and friends.



The day started bright an early. I headed to the gym perusal and it was pouring out. I could only hope it would be cleared by the ceremony. Just a few hours of sun and I would be a happy girl. The rain stopped by the time I was done working out an hour later and I was feeling hopeful. I headed home to get ready for the big moment. Time moved so quickly: shower, check; hair, check; make up, check; cap, gown and hood, check. Before I knew it, it was 8:30 and we were rushing out the door. Luckily Brenden was kind enough to drive so I could finish painting my toe nails in a last minute decision to wear open toe shoes (the important things, you know).


 We made the trip to Baltimore. I was concerned about the traffic since it was rush hour and the roads were wet from earlier, but the trip ended up being quick and peaceful. The sun was shining bright by the time we got to the Lyric (were the graduation took place) and I went to line up while Brenden went to grab seats for himself and my parents. The next hour was spent talking excitedly to the friends I have made in the last three years in the Publication Design program. It was bitter sweat. We were all excited, happy and proud, but there was also the lingering thought that we would no longer be seeing each other every Tuesday and Thursday. As stressful as classes and projects were, I was always excited to have a reason to see and talk with my friends.


We were lined up alphabetically with other classmates in the Yale Gordon College of Arts and Sciences. We took a lasting group photo of the pub design group and we waited for our moment. We began walking around the building to enter, the day was beautiful. My parents gave me a tight squeeze and snapped some shots as they entered the building to find Brenden. We then excitedly walked into the building and then into the theater to find our seats.


The speeches were caring, humorous, and touching. It was a fantastic ceremony with many wise and kind words. The School of Public Relations walked across the stage. The School of Business walked across stage. Now it was our turn. The entire thing went so fast! Everyone stand. In line we made our way to the stage. Get your picture, hand the card with your name, shake with the right hand grab with the left. "Tracy Nicole Ringel," they called my name, "Master of Arts," it was official, i had done it. I walked cautiously a few steps, hoping I wouldn't trip. I shook hands and received my diploma. I walked a bit more, shook a few more hands, and handed my hood over. I bent down and was officially hooded, with a compliment on my cap decoration. My parents and Brenden were cheering me on from the balcony. Once more picture and down the stage steps back to me seat. When we were all back in the audience we were instructed to move our tassel to the other side. We listened to the alma mater, examined the fortune cookies we all received upon leaving the stage and began the recessional.


It was chaos as we left the theater, but good chaos. Joyful families waiting to unite. I hugged a few friends and found my family where we hugged and took a ton of pictures. We went outside to enjoy the day with more pictures and celebrating. My few hours of sun came through! We then made our way back home where we had a wonderful, celebratory lunch at Cafe de Paris. My parents even surprised me with beautiful flowers (I love flowers!) and a silly card. It was a great way to end the ceremony and festivities. I am so happy and filled with warmth to be done and have so many people in my life who support me and are proud of me. I could not have asked for a better day.
