This week, we did not have a typical date night dinner. There is only one more month left of summer. To me that means I need to spend as much time as possible stuffing my face with watermelons and strawberries, going on long bike rides, laying by the pool, and enjoying the nice weather. To Brenden that means there is only one more month until he can step outside without instantly turning into a puddle do to the humidity, he won't have to shower three times a day to cool off and refresh himself, and he can begin to dominate his now 'buy-in' fantasy football league. And with fantasy football comes actual football. Brenden is a pretty big football fan; I am not. Lucky for me, Brenden's favorite team, the 49ers, lives on the west coast, which means limited TV air time here on the east. But this was Brenden's lucky week.
On Tuesday evening, two nights before the 1st Raven's game of the season, and before our weekly date night dinner, I happened to hear a conversation about the Raven's opening preseason game. As I stated, I don't care much for football, and thus the conversation was not of interest, until I heard the next phrase, "against the 49ners." My ears perked up, and I knew I had to get tickets for Thursday nights game, our dinner would have to be postponed. So I investigated tickets on the internet and ended up getting a really good deal, for seats right over the 50 yard line.
Next was keeping the surprise a surprise. We went on as usual. We picked out some delicious sounding recipes for our typical Thursday night and we made our decision (so make sure to check back next week for a great summer BBQ veggie bowl). But when it came time to get the ingredients, I told Brenden I had something else in store for the night. We made the trip to Baltimore, and as soon as he saw the stadium he knew. He was so excited, and totally prepared to splurge of junky stadium food for the night. Luckily, we had a long walk from the car to the stadium and back, and about 1,000 stairs to climb to our seats, so we could burn off some of the calories. By the time we got to our seats after searching the vendors for a 49ers jersey with no luck, people watching the mass of fans, and grabbing some beer, the game was about to start and Brenden wasn't going anywhere. But my stomach was growling, and thus the food was left to me. Although I heard a tiny voice telling me to be good, my desire for something totally indulgent won over. I grabbed us some cheesesteaks and a giant, bottomless popcorn. It smelled delicious, and it was gone before I realized we hadn't taken a picture of it for this post.

What a wonderful day! It started out bright an early by completing 61x100's on the 1:45 at swim practice. It felt so good to be able to say I did that, and all before 7:30 am, yep I am cool. Then I was able to carpool with Brenden to and from work.And after he took me on a fabulous and delicious date to Iron Bridge Wine Company where we ate some amazing food. We both got lobster bisque to start with, and wine of course (I got sangria). Then I got a stuffed pepper and Brenden got chorizo stuffed chicken. We "finished" by sharing chocolate peanut butter bread pudding and the best creme brûlée I have ever had. Seriously. Ever!
And to finish the already amazing evening, we went to the movies where we saw 22 Jump Street which was quite hilarious and of course over stuffed our already full belles with a gianormous popcorn and icee. Yep we fat kidded it up tonight, and had an awesome time doing it. :)

Date Night Dinners - Snack Attack
Brenden hasn't been feeling very well this week, and with the hot sticky whether, I haven't felt like eating our usual big dinners. Just kidding, I am always up for big meals: dinners, lunches, and breakfasts...eat all the food! However, the humidity has left me dreading the extra warmth of the stove and/or oven in our crowded kitchen. Thus, this week we decided to feast on simple, easy to make and refreshing snacks rather then going all out with a big dinner dish.
Lately I have been overdosing on berries by adding them to my yogurt every morning. Unfortunately, once raspberries, blackberries, etc. begin to go bad, they go bad quickly. So, we figured we would make something using one of the berries were are piling up in the fridge. Before they spoiled. We looked through a few recipes, but when we found this extremely simple, extremely cute looking recipe that involved all of two ingredients we had our winner. Raspberries and chocolate, how can you go wrong?! The chocolate chip added an extra hint of sweetness that made these treats taste as lovely as they looked. If you didn't notice, I loved the burst of color and simplicity that this snack brought. I could have eaten an entire container of these things. And because they took all of two minutes to make, I amy just have to next time. And you better believe this will be the treat I bring to my next potluck.
While the raspberries where great, they were more of a ending the meal treat so we wanted to make something else that had a bit more substance. Along with fruit, I have a slight addiction to popcorn. There is usually a bag in the same room as me at all times. My popcorn buddy at work and I even compare and taste test different brands and flavors so we are sure we have our favorites in supply.
Chocolate Filled Raspberries
Recipe adapted from pinterest.com, Raspberries Stuffed with Chocolate Chips
Ingredients- 20 raspberries
- 20 semi-sweet chocolate chips
Directions
- Place chocolate chips in the 'holes' of the raspberries.
- Enjoy, simple as that!
Popcorn Trail Mix
Recipe adapted from womansday.com, Gridiron Snack Mix
Ingredients
- 2 cups unsalted mixed nuts (we used cashews, almonds, pecans, and pistachios)
- Nonstick spray
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 3/4 tsp salt
- 1/4 cup popcorn kernels (or 1 microwavable bag)
- 2 cups pretzel sticks, broken in half
Directions
- Heat oven to 350 degrees Fahrenheit.
- Spread nuts on baking sheet and coat them with nonstick spray.
- In a small bowl combine paprika, garlic powder, onion powder, and salt.
- Sprinkle 1 tsp over the nuts and toss to make sure all are evenly coated.
- Place the tray with nuts in the oven and bake for 7-8 minutes or until nuts are toasted (not burnt) and fragrant.
- While nuts are baking, pop the kernels in an air popper or microwave your bag of popcorn as directed. If you are air popping, spray nonstick spray to lightly coat plain popcorn as it pops.
- Coat the popcorn with the remaining seasoning mixture.
- When the nuts are finished roasting, add them to the popcorn.
- Mix in pretzels or any other complimentary snack of your desire.
- Pour yourself a bowl and enjoy with friends and a movie.
